Cheesy Winter Squash Gratin Recipe

There’s something about autumn that just BEGS us to make savory, cheesy comfort food. Casseroles, pasta dishes and gratins galore!

I recently found this Cheesy Winter Squash Gratin Recipe from my good friend Irene Kelley Hill and felt inspired to try it.

Well, you guys - this recipe was a hit! Squash is a very versatile vegetable, which I like since it gave lots of room for experimentation (and human error). For example, I probably could have cooked it about 10 minutes longer but, oh my, the flavors were delightful!

I now plan on experimenting with SO MANY recipes that include different kinds of winter squash. I used Organic Green Acorn Squash and no skimping on the heavy cream or parmesan! If you want this to be scrumptious, you simply don’t want to skimp or do this the “skinny way!”
