I love a healthy snack with few ingredients a quick to whip up and this was a hit!
8 ounces Cooked Beets (about 5 small) I got mine from Sprout, 8 ounce package, already cooked. PERFECT
1/3 Cup Walnuts, Toasted
1/4 Prepared Horseradish Squeezed Of Excess Moisture
1/4 Cup Plain Greek Yogurt
1 Tablespoon Fresh Lemon Juice
1 Tablespoon Olive Oil
Kosher Salt & Pepper (which I did not use, I felt like the flavor was great as is)
Blend all of the above ingredients together, I used my nutribullet.
